Commercial Kitchen Exhaust – Hood and Duct Systems

This two-day special topic class on commercial kitchen exhaust hood and duct systems (also referred to as commercial kitchen ventilation, or CKV, systems) is for anyone who is involved in these systems. This includes kitchen designers, building inspectors, fire inspectors, plan reviewers, architects, mechanical engineers, contractors and product suppliers.
The course provides a comprehensive review of many regulations and concerns for the proper system design, installation, operation and maintenance. The requirements from the NFPA 96 and mechanical code for the construction of the hood and duct system are explained and illustrated. The fire extinguishing system has specific design and installation requirements which will be reviewed. A check list of the applicable code sections will be provided along with the workbook.
These systems require proper equipment, which have been tested and listed, generally by Underwriters Laboratories Inc. (UL). The UL standards and requirements used in evaluating these products, conducting the different tests, and how listing of these products is achieved, will be explained. Illustrations and examples will demonstrate how to determine if a product complies with the required standard and code. Catalog cuts and workbook illustrations of different equipment will be used to illustrate the products and their use. The final acceptance of the system installation is the proper test of all the equipment and the entire system. The test and inspection requirements for the hood and duct system, fire extinguishing system and the systems together are explained.
